Spring Vegetable Fettuccini with Grandpa Scalzo’s Famous Chicken Sausage

About this Recipe

  • 1 lb package fettuccini (cooked ‘al dente’ per pachkage directions)

  • 1/2 head fresh broccoli florets

  • 1/2 head fresh cauliflower florets

  • 1/4 lb (a good handful) frsh string beans 

  • 1 Tsp + 1/4 cup olive oil, divided

  • 1 pound Grandpa Scalzo’s Famous chicken sausage – hot or sweet

  • 3 Tbs butter

  • 1/2 head garlic, minced

  • 1/2 medium red onion, diced large

  • 1/2 cup halved cherry tomatoes
  • 1/4 cup fresh parsley
  • 1/4 cup grated Pecorino Romano cheese

Step 1

Cook fettuccini per package directions “al dente” in boiling salted water, drain and set aside

Step 2

Steam broccoli, cauliflower and string beans til tender, set aside

Step 3

In a larget skillet heat 1 Tsp olive oil over medium heat. Cook Grandpa Scalzo’s Famous chicken sausage to 160º internal temperature. browning on all sides. Remove from pan and cool, then cut into 3″-4″ pieces. 

Step 4

Wipe skillet with paper towels and return to stove
Add butter and and 1/4 cup olive oil over medium low heat
Add onions and garlic and cook until golden, not browned

Step 5

Add tomatoes and sauté just until softened
Add steamed vegetables, toss to coat

Step 6

Add all to fettuccini and mix well, transfer to serving dish
Sprinkle with parsley and cheese
Arrange sausage over top and serve hot
