Grandpa Scalzo’s Famous Chicken Sausage WITH SPINACH AND CHEESE RAVIOLI
About this Recipe
2 Tbs plus 2 Tsp olive oil, divided
1 1LB package Grandpa Scalzo’s Famous, hot or sweet
1 large sweet onion, diced
8-10 cloves garlic (adjust to taste)
- 10-15 ripe plum tomatoes (or 1 28oz can Cento San Marzano peeled tomatoes) diced
- 1 Tbs basil
1 Tbs parsley
1/4 C white wine
1 – 16oz package spinach and cheese ravioli
- Salt and pepper to taste
- Grated Parmesan cheese to taste
For ravioli, bring large pot of water, pinch of salt and 1 Tsp olive oil to boil.
Meantime, heat 1 Tsp olive oil in large skillet over medium heat.
Cook Grandpa Scalzo’s sausage whole until evenly browned and 160* internal temperature, then remove and set aside to cool.
Wipe skillet with paper towel, return to stove and heat 2 Tbs olive oil.
Add onion and garlic, sautée till onion is translucent, 4-5 minutes.
Add tomatoes, basil, parsley, wine, salt and pepper.
Cook 20 minutes stirring occasionally, breaking apart any large chunks of tomato.
Meantime, slice sausage into 1/4 inch rings and add to sauce while it cooks.
Add ravioli to boiling water and cook according to package directions.
Drain and place in large serving piece, pour sauce and sausage over top, toss and sprinkle with grated Parmesan.
