Grandpa Scalzo Famous Chicken Sausage with Goat Cheese, Caramelized Onions and Pesto Pizza
About this Recipe
1 – 1lb package Grandpa Scalzo’s Famous chicken sausage, either hot or sweet, your choice
Boboli pizza crust, either 2 mini crusts or 1 large
1 – 28oz can of Cento whole peeled tomatoes with basil leaf, slice into strips
3 large sweet onions
1 – 4.5 oz package of goat cheese
1 jar of basil pesto
3 tablespoons butter
- 1⁄2 teaspoon olive oil
Preheat oven to 400 degrees.
Caramelizing the onions:
Thinly slice onions. In skillet over medium low heat add butter, olive oil and onions. Cover with tight fitting lid. Let cook covered until onions are translucent.
Remove the cover and let cook for about an hour stirring frequently until brown. Remove from skillet and set aside.
Add sausage to skillet with a little olive oil and cook on medium heat until internal temperature is 160 degrees. Remove from skillet, cool, then slice into thin 1⁄4 inch slices.
Assembling the pizza:
Place crust on a pizza pan, pizza stone or cookie sheet. Add a generous spoonful of pesto in the center of the crust and spread evenly toward the edge. Lay tomato slices around the edge, add caramelized onions and sprinkle with goat cheese, then top with sausage slices.
Place pizza in center of oven and cook for approximately 10 minutes, until the crust begins to brown and the cheese is melted. Enjoy!
